SUMMARY:CulinAerie Knife Know-How and Cooking Class
DESCRIPTION:Register for event >\nEvent capacity: 30 \nSuggested donation supporting the university’s COVID-19 response and student financial aid: $50 \nCulinAerie chef and co-owner Susan Holt (MA’85) is hosting her popular Knife Know-How class while simultaneously working with you to create a delightfully simple summer meal. This class will be educational and technique-forward\, while remaining true to the well-known and loved CulinAerie spirit of entertainment and hospitality. A large portion of this class will include a discussion and demonstration of the proper way to hold your knife\, the technique of the rocking motion\, and the best way to cut the variety of vegetables we’ll be using for our dish—a roast chicken (or salmon if preferred) with new potatoes\, summer vegetables\, basil\, chèvre\, and lemon. This one-pan recipe is ideally suited to this unique virtual experience. We’ll also take part in a fun culinary trivia component\, with questions being asked throughout the event. \nWhat you’ll need\nThree days prior to the class\, we will share the recipe details\, along with shopping and equipment lists. (Note: Each recipe will be scaled for two to four people.) \nGiven the session’s focus on knife skills\, we will ask participants to familiarize themselves with the recipe in advance as well as purchase and have readily available all ingredients if you intend to cook along with us! \n  \n\n  \nHost bio\n \nCulinAerie co-founder Susan Holt received a B.A. in English literature magna cum laude from The University of Tennessee in 1984\, where she was a John C. Hodges scholar. She received an M.A. in English literature from Georgetown University in 1985. She graduated with honors from L’Academie de Cuisine’s two-year Culinary Career Training Program in 1989 and worked in various Washington\, D.C. restaurants for six years\, notably Georgetown’s famous 1789 and The Dining Room at the Ritz-Carlton. Holt worked as an instructor at L’Academie de Cuisine for 12 years\, teaching such classical technique-driven classes as bouillabaisse\, puff paste\, risotto\, and soufflés. She has conducted classes at Sur la Table\, The U.S. Botanic Gardens\, and The Epcot International Food and Wine Festival\, and has been featured on many local morning news shows. She lives in Washington\, D.C.\, with her husband and two sons. \nAbout CulinAerie\nCulinAerie is the foremost recreational cooking school in the nation’s capital.
